Thanks, this will take me some time but I'm on it! Wait, I read your text, I'm not unlocking anything here, only changing the default/current values of direct settings (no tabs).
Please check it all over again, and tell me what you want the setting to be for any and all settings you want changed. Also, don't cram them together, so I can easily tell exactly setting name and what you want to be the applied setting.
Here's how to tell the current default setting (example), this exact example may not apply to all settings, but hopefully will show you the way to see which is default for any set of settings as you look them over.
Setting: Quick Boot, Variable: 0x72[1] {05 09 72 00 01 97 02 98 02}
Option: Enabled, Value: 0x1 {09 09 41 00 01 00 01 00 00} << Enabled is default due to the bold 01
Option: Disabled, Value: 0x0 {09 09 40 00 00 00 00 00 00}
In other areas/settings, sometimes you might see the following example type used, bolded number is what sets default
Option: Auto-Selected, Value: 0x0 {09 09 4B 00 00 00 05 XX XX} Default due to 05 All other non-default options will have a 04 instead of 05 in this settings options block
Option: IRQ3, Value: 0x3 {09 09 AE 00 03 00 04 XX XX}
Option: IRQ9, Value: 0x9 {09 09 AE 00 09 00 04 XX XX}
