I have a motherboard "DFI LanParty JR T3H6" X58 socket lga 1366 and i would like to use a Xeon L5640 who are not compatible, is it possible to modify ?

Did you try to boot Xeon L5640 on your motherboard? What was a result?
Post a screenshot of third (Mainboard) tab of CPU-Z with supported CPU.
And give link to download actual BIOS.
